Presentation by Stéphane Brami Cadet Gassicourt was a chemist and pharmacist like his uncle, who had written dissertation in 1806 on coffee, wherein Cadet Gassicourt had dealt with the chemical analysis of coffee and its properties. It shows the plan of the book by his uncle, but applied to tea. The author gives interesting information about the species present in tea merchants (And their origins), customs etc.. The section on physical and chemical properties of tea is probably the most important.
